Homemade BBQ Chicken Calzones

So last night I made bbq chicken calzones and besides the fact that I used a biscuit/pastry dough instead of pizza dough they were quite good.

Ingredients:

1 boneless skinless chicken breast
1 package of pizza dough - the uncooked stuff you find by the biscuits and cookie dough
1 small onion
4 slices of bacon
chopped cilantro
2/3 cup bbq sauce
1 1/2 cups shredded mozzarella cheese

Directions:

Boil the chicken breast in hot water until cooked and then shred the chicken into a separate bowl. Cook the 4 slices of bacon in a pan, when done remove bacon and add diced onion to the bacon grease along with the shredded chicken. Grill the chicken and onion until the onion is soft then crumble bacon into the pan and add the 2/3 cup bbq sauce. Stir and grill all of the ingredients until bbq sauce is nice and hot and mixed well with the chicken and onion.

Next layout your pizza dough into 2 even sections squares or circles will work. Place half of the chicken mixture onto each section of dough. Then add the mozzarella cheese and chopped cilantro. Lastly, fold over the dough and pinch the edges together with a fork. Cook for 20 minutes in a 400 degree oven. Enjoy!



This is my shredded chicken after I boiled it for about 15 minutes.


I LOVE Sweet Baby Ray's BBQ sauce its amazing. The honey chipotle definitely added a little zing to this recipe. I would probably with their classic bbq sauce flavor in the future.


This is my final chicken mixture with the onion, bacon and bbq sauce.


The calzones were enormous so beware they really feed like 3-4 people. Unless you have a husband or significant other who is a beast when it comes to eating.



So I get -10 points for presentation, but the dough was much harder to work with then I had anticipated. Probably also has to do with the fact that I didn't use pizza dough... fail.



At least the end product still tasted good no matter how it looked. The husband still ate it and that is all that really matters :)
